Corn Bread for Mellow Bakers

I was surprised and delighted with this formula by Jeffrey Hamelman as I wasn’t expecting it to make such a charming bread.  I once again scaled the recipe down to make just one loaf as follows:

Poolish
113 g water
113 g bread flour ( I used the very strong flour again for this part)
1/16th tsp of active dried instant yeast aka a pinch of yeast!

Left overnight at room temperature for 12 hours

In the morning I soaked some 113 grams organic maize meal in 192 grams of water and left it for about quarter of an hour while I had a cup of tea and some brekkie and rattled around with some white leaven that I was using for some other breads.

Bread – Jeffrey Hamelman – Errata sheet

Just a quick info post for anyone who owns a copy and/or  bakes from the wonderful ‘Bread’ by Jeffrey Hamelman.

Paul  who organizes the Mellow Bakers  (and has this  great blog Yumarama Bread ) has been in contact with JH and has been given this errata information to distribute.

So if you want to update your book then pop over to Mellow Bakers and download the update, courtesy of Mr Hamelman!   And if you are thinking about buying this book, make sure you ask which print run it is and get the latest one :)


Here is a pdf with a list of the breads in ‘Bread” available from Amazon. This book is not easy to find on the shelves of english bookstores so I hope it’s ok to put this here and doesn’t break any copyright rules. There are also chapters on decorative bread making and all you could want to know about braiding breads.  Great reference book. Nuff said.

Toast for everyone

My internet connection was temporarily interrrupted there.

Yesterday I made a stack of white milk bread for toast mainly.  I used the scary very strong flour without mixing it with anything else.  It says it has 15 g protein per 100 grams.  These loaves are 425 grams in the smaller ones and 600 grams in the bigger two and a lot of air!

The round one is made in a milk loaf tin from Lakeland.
